1 wheel of brie (8 oz)
3 tbsp fig jam
4–5 Medjool dates, pitted & chopped
2 tbsp shelled pistachios, roughly chopped
1 tbsp honey
2–3 sprigs fresh thyme (leaves only)
Crackers or baguette, for serving
Preheat oven to 375°F (190°C).
Lightly score the top rind of the brie in a criss-cross pattern — this helps it melt evenly & soak up the toppings.
Place brie on a parchment-lined baking dish.
Spread fig jam over the top, then layer on chopped dates, pistachios, and thyme.
Drizzle generously with honey.
Bake for 12–15 mins, until warm and gooey.
