Basil Pesto Brown Sugar Bites

Ingredients

8 Slices of Thick Cut Bacon, cut in half

1, 6 oz Jar of Basil Pesto

16 Fresh Basil Leaves

1, 8 oz Package of Halloumi Cheese, cut into 16 cubes

1 cup Brown Sugar

Olive oil spray

Directions

Preheat oven to 425 degrees.

Prepare a broiler pan to allow drippings to fall to the bottom. Gently spray the top pan with olive oil.

Take 8 slices of bacon from the package and cut all 8 pieces in half to create 16 total pieces. Take the Halloumi cheese from the package and cut into 16 cubes.

Place 1 slice of bacon on a cutting board and smear with pesto from top to bottom. Top 1 end of the bacon with 1 basil leaf and 1 piece of halloumi cheese. Roll the bacon to enclose the basil leaf and cheese. Roll all the way to the bottom. Secure with a toothpick and roll through brown sugar in a bowl. Creating a light coating of the sugar. Add each piece to the broiler pan. Repeat with remaining bacon, pesto, basil, Halloumi, and brown sugar.

Bake for approximately 20 minutes or until bacon is golden and cheese is tender. Allow to set for 5 minutes and then remove toothpicks, if you wish. Serve with a honey mustard dipping sauce or eat plain.
