Caprese Roasted Asparagus

Jazz up your usual Roasted Asparagus by marrying the Italian flavors of a classic Caprese salad! A quick and easy vegetable side dish bursting with fresh springtime goodness!


1 lb asparagus

2 tbsp olive oil

1/4 tsp Kosher salt 

1/4 tsp black pepper

2 cups shredded mozzarella cheese

2 cups cherry tomatoes

2 tbsp fresh chopped basil

2 tbsp bottled balsamic glaze


Preheat an oven to 400°. Line a baking sheet with foil or parchment and spray with olive oil.

Wash and trim your asparagus. Place the asparagus on one side of the baking sheet in a row while placing halved cherry tomatoes on the other side. Drizzle the top of asparagus and tomatoes with olive oil and sprinkle with the salt and pepper.

Place the veggies in the oven and cook for 10 minutes. 

Remove baking sheet from the oven and top the roasted asparagus with mozzarella. Place back in the oven and continue to cook for an additional 5 minutes or until the cheese has melted and is slightly golden.

Remove the baking sheet from the oven and place the asparagus on a serving plate. Top the asparagus with roasted tomatoes and fresh basil. Drizzle the balsamic glaze on top and serve.

PREP TIME: 10 minutes

COOK TIME: 15 minutes

TOTAL TIME: 25 minutes
