The perfect appetizer for the upcoming holidays — or any gathering throughout the year! These golden, crispy artichokes are bursting with flavor and pair perfectly with a cool, creamy dip. Simple, elegant, and always a crowd favorite. 💛
2 cans canned artichokes, drained and patted dry
1½ cups shredded parmesan cheese
Lemon pepper seasoning, to taste
3 tbsp olive oil
½ cup plain Greek yogurt (full-fat recommended)
1 tbsp minced garlic
2 tbsp chopped cilantro
1/2 lemon juice + zest of 1 lemon
Salt/Pepper to taste
Preheat oven to 400°F and line a large baking sheet with parchment paper.
Drain artichokes and pat dry with paper towels.
Sprinkle the baking sheet with parmesan cheese, spacing it out in small mounds.
Place each artichoke, cut side down on top of the cheese and gently smash with the bottom of a glass.
Sprinkle with more parmesan and lemon pepper seasoning, then drizzle lightly with oil.
Bake for 12-15 minutes, until the cheese turns golden brown and crisp.
While baking, mix together the Greek yogurt, garlic, cilantro, lemon juice & zest, and additional lemon pepper seasoning until smooth and creamy.
Let the artichokes cool slightly, then serve warm with the dip — and watch them disappear fast! 😋
