Crockpot Pork Tenderloin Carnitas

This is the easiest busy workweek meal. You basically throw it in a crockpot, press start and dinner is done!

Ingredients

2 small pork tenderloins

1 package LaTiara taco seasoning

1 onion, sliced

1, 4 oz can of hatch diced green chiles

1, 6 oz can of chipotle in adobo sauce

1, orange, juice squeezed, tossed in

Olive oil

Flour or corn tortillas

Cilantro, chopped

Directions

Add pork tenderloin to crockpot. Sprinkle on taco seasoning.

Add cans of Hatch green chiles and chipotles.

Squeeze in juice from orange and toss the rest of the orange into the pot.

Cook low and slow in your crockpot for 6-8 hours.

After cooking, shred with two forks. You can either eat as is on tortillas, or add shredded pork to a cookie sheet, drizzle with olive oil, and broil in your oven until crispy and delicious (5-7 minutes).

Top with chopped cilantro and any additional condiments you wish.
