Cool off with these tropical Dragon Fruit Popsicles — creamy, fruity, and naturally sweet! Made with coconut milk, pineapple juice, and fresh dragon fruit, they’re the perfect refreshing treat for sunny days.
2 fresh dragon fruit
1/2 cup pineapple juice
1/4 cup lemon juice
2 cans coconut milk (full fat, room temperature)
Optional: Add up to 2 tablespoons maple syrup or 1/4 cup extra pineapple juice for sweetness. Or, 1/2 cup of coconut rum for an adult treat.
Tips for How to Cut a Dragon Fruit
Wash both dragon fruits well.
For the first dragon fruit, slice it in half lengthwise. Cut thin slices, then cut those into small triangle shapes. Carefully trim away the tough skin from each triangle and discard, but leave a bit of the fuchsia-colored rim for a pop of color. These triangles will be placed inside the popsicle molds for texture and a pretty design.
For the second dragon fruit, slice it in half lengthwise. Use a large spoon to scoop out the flesh, just like you would with an avocado. Discard the peel.
DIRECTIONS
In a blender, combine the pineapple juice, lemon juice, and both cans of coconut milk (use the entire cans). Blend until smooth.
Taste the mixture. If you’d like it sweeter, add the optional maple syrup or extra pineapple juice and blend again.
Place the dragon fruit slices into the popsicle molds first. Pour the blended mixture over the dragon fruit in the molds.
Place top on mold and insert popsicle sticks into the mold. Freeze for at least 8 hours, or until completely solid.
To release the popsicles, run warm water on the outside of the molds. Enjoy!
