Easy Bruschetta at Home

Making homemade bruschetta is better at home. Why? Because you get the freshest ingredients. So delish!

Ingredients

2 cups of cherry tomatoes - I love Flavor Bombs. You can find them at Sams Club - diced

1/4 cup chopped, fresh basil

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1/4 cup finely shredded parmesan cheese

1/4 cup balsamic vinegar

3/4 teaspoon kosher salt

1 teaspoon fresh cracked black pepper

1 loaf heart french bread, sliced to 1/2 thick slices

Directions

In a large mixing bowl, add diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, parmesan, salt and black pepper. Give it a stir and store in the refrigerator for about an hour to allow all flavors to marry. 

To toast bread, position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.

Top each cooled slice of bread with bruschetta and enjoy.
