Empress Gin Grapefruit Fizzer

Nothing says “Summer Cocktail” like this light and refreshing Empress Gin Grapefruit Fizzer. Super refreshing with a sweet and tart snap.

Ingredients

SIMPLE SYRUP INGREDIENTS

1/3 Water

1/3 Cup Lychee Juice from Can

2/3 Cup Sugar

COCKTAIL INGREDIENTS

2 oz. Empress Gin
3 oz. Grapefruit Juice
1 oz. Lemon Juice
1 oz. Lychee Simple Syrup
Splash of tonic water
Large Grapefruit Ice Cube

Slice of Grapefruit

Directions

For the lychee simple syrup, heat water, lychee juice, and sugar over medium heat until bubbly. Remove from heat and set aside to cool. Note: You can add several whole lychees to the simple syrup and crush into the mixture to release a bit more flavor. Strain the simple syrup and place it in the fridge until cooled and ready to use. 

To make the grapefruit slice ice cubes, I like to use large, silicone ice cube trays. Fill 3/4 of the way full and add a small slice of grapefruit. Freeze until hard. (An edible flower would be beautiful in the ice cubes as well.)

To make your cocktail, combine all ingredients except tonic water. Shake until frosty and pour into a glass over that beautiful large ice cube with grapefruit slice tucked inside. Top with tonic water. Garnish with an additional slice of grapefruit. Cheers!
