Healthy Meatballs & Spaghetti

Looking for a healthier way to serve meatballs and spaghetti? My version is packed with all sorts of healthy goodies, but I promise, no one will ever know. I like to make these in huge batches and freeze the leftovers for nights when I need to pull together a quick meal. So easy. So good!

Ingredients
  • 2 pounds ground turkey or beef
  • 1 red onion (chopped fine in food processor)
  • 4 cloves garlic or 2 tablespoon garlic powder
  • 1 cup of slivered carrots
  • 1 cup baby spinach
  • 1 cup of fresh basil or 2 teaspoons dried
  • 2 tablespoons fresh thyme or 2 tablespoons dried
  • 1 plastic carton of fresh oregano or 2 tablespoons dried
  • 1/2 cup fresh Italian parsley
  • 1/2 cup fresh button mushrooms
  • 1/2 cup fresh tomatoes
  • 1 cup Italian bread crumbs
  • 6 whole eggs
  • .5 oz Parmesan Cheese
  • 1 tsp salt
  • 1 tsp fresh cracked pepper
  • 2-3 Jars of store-bought spaghetti sauce
  • 1/4 cup Cabernet Wine
Directions
  1. Add ground turkey and/or beef to a large bowl.
  2. Add onion, garlic, basil, thyme, oregano, parsley, carrots, parmesan, and breadcrumbs in separate batches to a food processor. Mince all fine. Add all minced items to the bowl with meat.
  3. After all vegetables are added to a bowl; add eggs. Mix with hands. You’re looking for mixture, especially the breadcrumbs, to soak up the eggs and for the meat be be able to form into a ball and hold its shape. If it’s not forming, add a few more breadcrumbs.
  4. After forming the mixture into balls, add to a olive oil coated cookie sheet. Broil in oven for 10 minutes.
  5. While meatballs are broiling, start your sauce. Put 2-3 jars of store-bought spaghetti sauce into a large pot. Add 1/4 jar of cabernet to the sauce. Bring to a slow simmer.
  6. When meatballs are done in the oven, they should be golden brown. Add cooked meatballs to the sauce and cook on a slow simmer for 30 minutes to 1 hour or until meatballs have absorbed some of the sauce.
  7. Add on top of any pasta you prefer. Garnish with shaved parmesan and Italian parsley. Enjoy!
