Impossible Ranchy Tostadas

It's no secret that I love tacos. But, since going pescatarian, I don't always get to enjoy them while out in a restaurant. My Impossible Ranchy Tostadas give me my taco fix without the real beef. But, if you're not into the Impossible Burger, you can always substitute ground beef or turkey and get the same great YUM result.

Ingredients

Tostadas (I like the Mission variety)

1 Can Ranch Style Beans with Sliced Jalapeño Peppers

Impossible Burger (made from plants) Ground Beef or regular Ground Beef or Turkey

1/2 Diced Sweet Onion

2 Tablespoons Olive Oil

1 Pkg La Tiara Taco Seasoning (it's the BEST)

Monterrey Jack Cheese (I prefer to grate my own)

1 Avocado

1 Cup Diced Cherry Tomatoes

Iceberg Lettuce

Trappy's Sweet 'n Hot Jalapeño Slices

Directions

In a pan, sauté diced onion in olive oil until it becomes translucent and crispy around the edges.

Add Impossible Burger Ground Beef (or ground beef or turkey). Brown. Add Taco Seasoning and continue to brown together.

In a small sauce pan, heat the Ranch Style Beans.

While burger and beans are heating, get your other ingredients ready. Chop iceberg lettuce, dice tomatoes, cut avocado into cubes.

ASSEMBLY:

Put tostada under the broiler for 2-3 minutes. Top with beans, meat, sprinkle of cheese, lettuce, avocado, tomatoes and sweet jalapeño slices. Enjoy!
