This bright and zesty twist on the classic Caesar salad brings a citrus-forward flavor thanks to fresh lemon juice and zest in the homemade dressing. Crunchy homemade croutons and grated Parmesan make this salad a real crowd pleaser!
For the Salad
3 heads Romaine hearts, washed and roughly chopped
1 French baguette loaf, cut into large cubes
2-4 tablespoons olive oil
1-2 teaspoon Montreal steak seasoning
1 cup grated Parmesan cheese
For the Dressing
1 cup olive oil
4-6 cloves garlic, roughly chopped
½ teaspoon Montreal steak seasoning
2 tablespoons grated Parmesan cheese
2 tablespoons Dijon mustard
Zest and juice of 3 small lemons
Wash the romaine hearts thoroughly and pat them completely dry. Roughly chop and place in a large mixing bowl. Set aside and keep cold.
Preheat your oven to 425°F. Spread the cubed baguette pieces evenly on a baking sheet. Drizzle with 2 tablespoons of olive oil (more if needed) and sprinkle with 1 teaspoon of Montreal steak seasoning. Toss thoroughly with your hands to ensure each piece is well coated. Bake for 10–12 minutes, or until golden brown and crispy. Remove and let cool.
Add all dressing ingredients (only use 1/2 cup of the parmesan) to a large mason jar with a tight-fitting lid. Shake vigorously until fully combined. For best flavor, refrigerate for a few hours before serving to allow the flavors to meld.
Add the cooled croutons to the chopped romaine. Drizzle generously with the lemon Caesar dressing and toss well to coat. Sprinkle with additional grated Parmesan cheese to taste, and toss once more.
