Margarita Pizza

Pizza is always a good choice on a busy weeknight. Our family loves the Trader Joe's pizza crust. (We've also been known to make a pizza on a puffed pastry, which is extra decadent.) This week calls for easy, so I'm going to whip up an easy individual Margarita Pizzas that are fast and delicious. Serve with a simple green salad with my Lemon Vinaigrette and you have a pretty tasty meal!

Ingredients

2 Packages of Fresh Mozzarella Cheese

1-2 Heirloom Tomatoes, sliced thin

1 Bunch (or Package) Fresh Basil, chopped into strips

1 Jar of your favorite Pizza or Spaghetti Sauce

2 packages of Trader Joe's raw Pizza Dough (or any crust you prefer)

Kosher Salt

1/4 cup olive oil

Directions

Cut the Heirloom tomatoes thinly and place on top of a paper towel. Sprinkle with kosher salt. Allow to sit to remove some of the water from the slices.

While tomatoes are working their magic, sprinkle flower on countertop. Roll Trader Joe's dough out with a rolling pin. Cut individual sizes if you wish.

Place rolled pizza crust on a parchment paper lined cookie sheet. Begin building your pizza.

Add sauce, tomato slices, basil and then mozzarella at the end. I like to brush edges with olive oil. And drizzle a tiny bit of olive oil over each pizza.

Bake according to Trader Joe's package directions.

Allow to cook slightly before slicing. Serve and enjoy!
