CROCKPOT BASE RECIPE
2 sweet onions, diced
2 lbs chicken thighs (or breasts, even frozen!)
1 (8 oz) jar salsa (your fave)
2 cans diced green chiles
1 jar pickled red onions

MEAL #1: Chicken Birria Tacos
In a buttered skillet, lay down a corn tortilla.
Add shredded Mexican cheese + chicken (on one side).
Fold + crisp both sides.
