Busy weeknights? One crockpot recipe turns into THREE delicious Mexican-inspired meals—Birria Tacos, Mexican Soup, and Taco Bowls! Cook once, eat all week.

Ingredients

CROCKPOT BASE RECIPE

2 sweet onions, diced

2 lbs chicken thighs (or breasts, even frozen!)

1 (8 oz) jar salsa (your fave)

2 cans diced green chiles

1 jar pickled red onions

👉 Toss everything into your crockpot. Cover and cook on LOW 8–10 hrs. Shred chicken with 2 forks when done. SEE DIRECTIONS FOR ADDITIONAL INGREDIENTS ACCORDING TO MEAL.

Directions

MEAL #1: Chicken Birria Tacos

In a buttered skillet, lay down a corn tortilla.

Add shredded Mexican cheese + chicken (on one side).

Fold + crisp both sides.

Serve with crockpot juice + sour cream for dipping.

Shred the chicken.

Add ½ bag roasted frozen corn (last hour).

Add 2 cans black beans, drained (last 30 min).

Stir in ½ cup cilantro + optional ½ cup heavy cream.

Top with tortilla strips, sour cream, lime, and cilantro.

MEAL #3: Mexican Taco Bowls

Build your bowl with rice, black beans, shredded chicken.
