One-Pan Skirt Steak Tacos

This one. This one right here is where it’s at! Make this for your family and they will be singing your praises. So simple, but bursting with flavor. As an added bonus? It’s all made in one pan, so clean-up is a cinch! 

Ingredients

SALSA INGREDIENTS

2 Tablespoons Olive Oil

3 Vine Ripened Tomatoes, Cut in Half

2 Serrano Peppers, Halved

1 Large Jalapeño, Halved

4 Tomillo

1 Sweet Onion, Halved

4 Cloves Garlic, Minced

Juice of 1 Lime

1 Cup Fresh Cilantro, Minced

1/4 Teaspoon Kosher Salt

1/4 Teaspoon Freshly Cracked Black Pepper

STEAK INGREDIENTS

2 Pounds Skirt Steak, Fat Removed

1 Package La Tierra Taco Seasoning (or any taco seasoning of your choice)

1/2, 8 oz can of Chipotle Sauce

1 Tablespoon Olive Oil

TACO TOPPINGS

1 Bunch Cilantro, Minced

1 Sweet Onion, Diced

1 8 oz Package Monterrey Jack Cheese

1 Package Organic Corn Tortillas

Directions

SALSA DIRECTIONS

Add 2 tablespoons olive oil to a large cast iron skillet. Toss in the tomatoes, tomatillo, peppers and onion. Roast until tomatoes are starting to soften and all vegetables have a slight char. Transfer to a blender. Add, garlic, lime juice, cilantro, salt and pepper. Blend to salsa consistency. Add to a mason jar or bowl and set aside.

STEAK DIRECTIONS

Slice skirt steak against the grain and the chop in to small pieces. Add to a mixing bowl. Add taco seasoning and chipotle sauce. Toss to combine. 

Add 1 tablespoon olive oil to the same cast iron skillet. Add beef and cook to medium to medium rare. Approximately 4-5 minutes. Don’t over cook. Remove from pan and set aside. 

BUILD YOUR TACOS

No need to rinse skillet after removing meat, but make sure pan doesn’t have any remnants of the meat juice. Pan should be mostly dry with a tiny glisten of sauce. Toss two corn tortillas down in the pan. Heat on the first side for 30 seconds and turn over. 

Sprinkle a small amount of cheese over each tortilla. Add small amount of steak, diced onion, cilantro, and a sprinkle of your homemade salsa to one side of the tortilla. Fold over the other side and gently press down. After 1 minute, flip and do the same on the other side. Remove from pan and allow to rest for 1-2 minutes. 

Serve with additional salsa, fresh guacamole, and a fresh salad with lime vinaigrette. This one is a crowd pleaser for sure! Should serve 4 people, but you will have lots of that delicious salsa for leftovers.
