Oven-Roasted Herby Potatoes

Side Dish

These are my family's favorite potatoes. They literally go with almost anything. So good.

Ingredients

1 large bag of baby potatoes (I like bite-sized creamers or anything from the Little Potato Company)

1/4 cup olive oil

Italian Seasoning to taste. I use about 3 tablespoons.

1 small package of baby chives, chopped fine

1 small packages of fresh dill, chopped fine

Salt & Pepper to taste

Directions

Preheat oven to 425 degrees.

Wash and clean your potatoes well and pat dry.

Cut potatoes in half and toss into a large mixing bowl.

Cover potatoes with olive oil, seasoning, salt and pepper. Toss with your hands to coat.

Add potatoes to a large cookie sheet. I like to place potatoes cut side down.

Place in the preheated oven and cook for 25-30 minutes or until potatoes look golden and are tender when pierced with a fork.

Remove from oven and allow to rest for 5 minutes.

Pour potatoes in to a large serving bowl and tip with chives and dill. Mix slightly and serve.

These are great on their own, but super delish alongside my whipped feta sauce.
