Turkey Zucchini Power Bowls

Ingredients

INGREDIENTS

1 Pound Lean Ground Turkey

2 Zucchini, Diced

1 Large Shallot, Minced

2 Red Bell Pepper, Diced

4 Cloves Garlic, Minced

4 Tablespoons Olive Oil

2 Packages Taco Seasoning (I ♥️ the La Tiara Brand)

1 Can Organic Black Beans

1 Package Uncle Ben’s Basmati Rice (or any rice you prefer. Quinoa works too for an extra protein punch)

1 Avocado, Diced

1/4 Cup Fresh Cilantro, Diced

1 Lime, wedges

Your Favorite Salsa

Directions

In a large skillet or pan, heat 2 tablespoons olive oil. Add shallot and garlic and sauté until onion is translucent. Add ground turkey to the shallot & garlic. Brown. Season with 1 package taco season. Set aside.

In a separate pan, heat another 2 tablespoons olive oil. Add red bell pepper. SAUTÉ for 3 minutes. Add zucchini and sauté all together for another 3 minutes. Season with a good sprinkling of taco seasoning. Continue to sauté, but careful not to sauté zucchini too much. You still want it slightly crunchy when you serve.  Remove from heat.

To make your bowl, add rice to the bottom of your bowl. Top with ground turkey, warmed black beans, and the pepper/zucchini mixture. Add a squeeze of lime juice, top with a few avocado slices, fresh cilantro garnish, and finish it off with a few spoonfuls of your favorite salsa. So damn good!
